I have a Sociology AS Level exam on Thursday and haven't been taught everything, could someone please tell me a list of everything I need to know/revise really confused on what is important to remember,

wow, I suggest you use the OCR sociology text book. it's green.
Also, only focus on age and ethnicity. this should condense your revision
