normal soil+moisture for the seed
copper rich soil for the seed
copper poor soil for the seed
leave for a while and see what happens

1st seed in (normal soil) in a sealed container filled with [pure/clean air] - no pollution
2nd seed in (normal soil) in a sealed container with [normal air from the surroundings] - medium pollution
3rd seed in (normal soil) in a sealed container filled with [air collected near an exhaust] - high pollution
for the heavy metals:
do what i said above with copper and zinc (what i replied at first)
and say you cant do it with the more toxic hvy mtls as they are unsafe for you to work with.
you could also merge the 2 tests e.g.
no pollution with low/normal/high lvls of copper, repeat for each pollution lvl
