I'm applying to do Medicinal Chemistry (MChem) with the option of a year in industry. In my personal statement should I mention the year in industry and why I'd like to do it or not? There's an option to do it without the year in industry so that's why I'm not sure whether it should be mentioned.
    Thanks.

If all the universities you are applying to offer a year in industry then I would mention it.

If it's on all the courses you're applying for. For example if university 1 offers it and university 2 doesnt, university 2 will not be pleased when you're talking about something that they don't offer.

Can i just ask on the personal statement front, is anyone finding it really hard to not have a really gimmicky opening line ?

All of my options (well, except one but they didn't offer it) were for the year in industry and I didn't mention it. They bring it up in your interview so no need to mention it at all!

I'm classed as a home student but I live in Spain and I'm not sure I'll be doing an interview as the universities have only mentioned interviewing UK-Based students.

Hmm, might be worth adding into your PS then. If they can't interview you, they'll want to know why you want to apply for the year in industry, and probably what you want to get out of it.
