    should I apply for both Maths and/with Econ? I'm not sure how the admission process works so assume that I'm rejected by one of the programme, will I be considered by the other one?

    You can in theory, but applying to two degrees at one university is never a good idea. LSE will see that you've done this, and might think you're more interested in the university rather than degree programme, which is a bad thing. That said, once you get into LSE, it's fairly easy to change courses if you have the required A levels. So go for the course which is less competitive, then switch if you want to if you get in.
