Ideally, you should apply as soon as you have your predicted grades.

Also, you should apply to all of the ones that interest you, it'll give you a wider range of possibilities.

Generally, your school will tell you when to apply as they will know the deadlines and will be helping you if your college needs a personal statement/more formal application so don't worry about timing. Also in regard to 'getting your application in first' colleges aren't usually formed on a first come first served basis within reason; admissions officers will have a deadline to stop receiving applications and from then they will look at every application one by one and sort through who will get a place and who won't. As you've said your course is popular look into making your application stand out from the crowd; read specialist books on your subject(s), go to museums or some such, get some relevant work experience and most of all make sure you have a really good, genuine reason and be able to demonstrate, why you want to study your course.
