I'm studying biology this year (as a mature part time student) as I did chemistry last year. Im considering doing Human biology as well. Will any universities really consider these two separate A-levels or will the shared topics leave one a little redundant?
Also...has anyone actually done human biology. Ive only managed to find the course via distance learning atm

I wouldn't do both biology and human biology, there's way too much overlap and I don't think there are any universities that treat biology and human biology as two separate A Levels

They are not considered as separate A-levels as a large part of the syllabi overlap, but it depends why you want to do them. Human biology may contain some, well, human biology that plain biology doesn't; biology also has plant and animal biology. If you're just doing it for interest then you might want to do both.
