It is clearly a situation where a crusade is justified as the infidels have been mistreating christians in the holy lands and are threatening to expand into europe. Why doesn't the pope call a crusade to crush the islamic state?

Because the Pope doesn't have anywhere near the same amount of power and influence that he would have had in the Middle Ages. Also, the historical Crusades, when you take away a lot of the glory associated with them, were really just a Christian version of Jihad in a way
