The 'So You Really Want to Learn Latin' books are a great start for learning Latin that provide a good grammatical foundation for beginners. If you want a more vocab-based approach the Cambridge Latin Course (CLC) is also pretty good (I personally prefer the 'So You Really Want to Learn Latin' books as I often find language learning easier if the grammar of the language is established early).
