Does Work Experience actually matter? Would it make a huge difference if you went to a shop retailer compared to say a pharmacy if you wanted to do Medicine or something along such lines?

It depends on what else you have on your CV / Personal Statement. If you are identical to someone else in terms of qualifications, extra circular activities, etc then they will pick the person with the work experience to give the place to. However if you don't get the right grades, then work experience won't help much.

End of the day, having relevant work experience isn't going to hurt you at all.
