So I did not take further maths for A level, and I reckon it will be useful for my university application (engineering).
Due to workload and time constrains, is it possible for me to do only 1 or 2 modules, sit an exam for them and attain some kind of formal proof from the exam board I did them? I need this so I can send it in my uni application so they can see I am skilled at maths. Or do I have to do an entire AS to get some kind of proof?

If your school/college is okay with you taking them, then you can. Obviously you won't get a qualification/certificate from it, but you will get the modules on your results slip.

You can, but you'll only have it listed on a results slip.
If you're going to study two modules, you may as well also study FP1 and get an AS out of it
