For the Coursework section, the specification states: "Candidates are required to produce a folder of coursework of a maximum of 3000 words with two tasks."
Does anyone know how strictly this is enforced? Are you allowed 10% over etc.?
Thanks in advance.

According to this document, anything over 3,000 words will not be marked (though this is at the discretion of your teacher, really, and unless your work is moderated you might get away with it).
Better to err on the side of caution and not go over 3,000 words. Remember footnotes, titles, quotations and bibliographies don't count, so if there's something you absolutely have to say that you can't fit in, you might be able to get it in a footnote. For a GCSE or A-level essay though, that really shouldn't be necessary.
Hope that was helpful.
