I am doing an investigation on catechol oxidase content in apples at various stages of ripeness. The problem is that if I have to measure the catechol oxidase content of the same apple everyday for a week, how should I store it because wouldn't catechol oxidase decrease over night from the cut surface, which could affect all the results?
