Is there a difference between these papers? As in, a particular difference? Do they count as 2 GCSEs if you do both, and would it just be pointless if i did paper B? I know it's statistics, but would it also count as a separate GCSE if tallied it with the rest of my other GCSEs?

Do you mean gcse or igcse?
For gcse A is the linear syllabus with 2 exams, 1 calculator and one non-calculator.
B is the modular syllabus comprising 3 exams. It can no longer be taken as modular exams spread through the course but is still available with all exams taken in the same exam period.
They are the same qualification, gcse maths, you could only count it as one qualification.
