Does your question refer to enzymes? well, enzymes are special proteins which are working as catalysts. By a certain temperature, the enzymes begin to denaturate, that is to say they lose their chemical and physical property, id est the structure is changed and the function of the enzymes get lost.

Reaction rate increases as temperature increases. So ideally if you are investigating the affect of enzymes on reaction rates, you should keep temperature constant.
