what kind of dessert are you looking at? does spring roll counts?
there is no such thing as most popular. popular varies according to different province.

Not sure about dessert, I think the Chinese prefer savoury food, but they do seem to like egg tarts, ice cream and frozen yoghurts.

I don't know if this counts as dessert (since I'm not Chinese), but I did try this amazing sticky rice dish during a homestay in Shanghai a couple years back. It was called Zongzi.
