Hey, in terms of beetroot, or anything with pigment
Why does the pigment leave the cell when in boiling water?

It's just because the membrane becomes damaged- proteins denature, the phospholipid bilayer becomes more fluid etc. So the overall permeability of the membrane increases and more pigment leaves the cell... Basically.
