For Animal Farm, read through the book and underline quotes. the end of section questions after each chapter are very useful for getting a gist of what they may ask. however i cannot really comment for I did it in year 9 for english and not for Literature. Of mice and men however I'm currently studying it. Read through the book. Do alot of past paper questions regarding it. If you want notes on it here are a few links:

I got 100% on both and my best advice is to LIVE AND BREATHE the books. This is easier if you actually find them enjoyable to read as I did.

I read them multiple times, each time giving new insight into possible interpretations.
