Does masters in food science involves food tasting?
if somebody is vegetarian is it compulsory for them to taste non veg food?

Short answer is no. The emphasis is on the 'science' part. Check out course contents on uni wrb pages - here's the one from Leeds as an example:

I'm finishing an MSc from mmu in food and my answer to your question is no.

There was more theory than tasting on my course and I can't imagine anywhere ethically insisting you eat something against your will.
