Can someone please explain to me why the concentration of copper sulphate solution is constant when purifying copper (anode loses electrons whilst cathode gains it)

I think you mean C3
And it's constant because for every cation that is deposited on the cathode, an anion is deposited on the anode, so the concentration never changes
