I have seen some universities offering engineering undergraduate program with a sandwich year but what does sandwich stand for?

A year in industry (also known as YINI). Usually the year before your final year.

The YINI is the filling in a sandwich of academic study

As jneill said, it is a year in industry.

This means that the degree will usually last 4 years if you do a bachelors and 5 years if you do a masters, though there are exceptions.
