Which should I do, what do Universities prefer, which is more useful?

At my school, RE GCSE was compulsory so i did Philosophy and ethics and i enjoyed it and thought of doing it for A level.

You should choose the subject you enjoy because you will be stuck with it for like 2 years.

I hated Geography so picked History instead but would have definitely picked philosophy and ethics as an option if it was not compulsory in my school.

Philosophy is still considered more difficult and thus more 'facilitating' to universities than geography.

It's ultimately your choice. If IIRC Philosophy A Level has astoundingly (and ridiculously) been made marginally easier as of this academic year so you got that going for you if you choose it.

As to which is more useful, i would say Geography because it does not limit you, for instance, it links with immigration and much more.

That said though, you should pick what you enjoy the most because you will be better at it.
