Why do people even complain about things like 'Gender Pay gap'

Would we be complaining about things too like "Hair colour pay gap" if some statistics reported that people with blonde, black and brown hair earned different salaries on average?
If it was found that people with different hair colours were systematically disadvantaged by a group of people with no hair over hundreds of years, then we'd see that as an inequity and have similar complaints.

Gender inequity is far different from hair colour inequity.

Whether the Gender Pay gap exists is a different debate.
it doesn't even exist - not only does it compare men and women of *all* professions and careers, but it confuses employer intent with employer choice
I don't think you understand the concept of systematic, institutionalised oppression. Maybe you should go read some books on it and then stop saying such silly things.
