Pectinase - optimum temperature

Does anyone know the optimum temperature for the enzyme pectinase? I've looked everywhere and they all seem to say something different! :frown: I have some that say 45ºC-55ºC, some say 40ºC, others 35ºC, others 60ºC. I need this quite urgently for my coursework. Thank you.

If anyone knows the optimum pH for pectinase it will be very helpful as well.

I might be doing your coursework. Is it to do with the effect of temperature on the release of pectinase in apples? if so; i got for my result that the enzyme is most active at 50˚. The optiumum pH i got are between 4.5 and 5.

Yeah, something like that: the effect of temperature on the volume of apple produced using pectinase enzyme. So it's around 50ºC? Great, thanks.
