I do believe that I am baffled by how a superoxide (O2-) can be stable. A common example is Caesium Superoxide (CsO2), which one can be produced as a product of the combustion of Caesium.

Stable in what sense?

The two oxygen atoms are held together by a bond order of 1.5 giving a particle which is electron deficient, but stable in conjunction with highly electropositive metal ions in an ionic lattice.
