Leptons and quarks are fundamental particles (ie. they aren't made up of other particles).

Leptons are electons, tau particles (and others, but I can't remember) and their associated neutrinos (electron neutrinos, tau neutrinos, etc).

Quarks come in 6 flavours: up, down, top, bottom, charm and strange. Protons and neutrons are made up of combinations of 3 up and down quarks and are classed as baryons. Oh, mesons are made up of 2 quarks (a quark and an anti-quark pair). Both baryons and mesons are classed as hadrons.
