So I studied health and social care a couple of years ago and got D* D* D as a final result. I took a gap year to get my health back on track then went to Kings College and studied Nursing. Halfway through I realized it wasn't what I wanted to do, so I quit the course.

I am now at college studying an Access to HE course for Paramedic studies, but I don't actually need to do this course because I have way over the grades needed to get into my university choices. I am spending money I don't actually have going to college to study for a grade I don't need to get into uni because I already have the grades!

I am struggling to know what to do next, do I continue or do I spend this year volunteering and gaining experience to prepare myself for next year?

You need to ask the unis you're going to apply to. They will probably want evidence of recent study, so it depends how long ago you got your other results. If it is "a couple of years ago" then you'll be fine, but if it turns out to be longer then you'll need to continue this course.
