I don't study my bachelors in the UK, and the date in which I can finish my degree is flexible.
Do I have to graduate my course before applying to graduate medicine? Can I apply in October, then graduate around January, for example?

Do you mean you would graduate in January 2016? If so, you can apply this October for entry for GEM in autumn 2016. Birmingham, however, require you to have graduated before application. As far as I know, it is the only university with this requirement. Are you EU, or International? If you are the latter, then you will be limited in where you can apply.
