How do I write a PS to cater for all these courses?
How do I write a personal statement to effectively cater for undergraduate degrees in Biology, Biotechnology, physiotherapy, biological sciences, and medical biology with environmental humanities?

I'm afraid you can't - you need to decide what you want to apply for (biology and biological sciences is doable) and then write your PS for that
Physiotherapy looks for applicants with their hearts set on it. Its massively oversubscribed (as many as 800 applicants for 25 places) so if unis get any inkling your not focussed on it you wont get any interviews let alone offers! I can't really speak for the other courses as I have no experience of their processes but I believe they are all similar
