It's a good solvent so many ionic substances can dissolve in it for transport round the body
It's cohesive so water is easily transported up the xylem of a plant. There are many other properties as well but generally you might want to get an understanding of hydrogen bonding in water so you might then get to grips with why water has certain properties a bit better.
