Why cant you write separate personal statements for different universities you want to apply for?

I mean you get 5 choices, what if you want to apply for a few different course/subjects?

Those are UCAS rules - it has been this way for a long time.

You will eventually have to select a single course to attend - in theory the sooner you make this decision and more research you do early to make that decision then the better that decision will be.

If you're applying to a course that is unique and not offered in any/many other universities then often if you approach the university directly they will either be willing to accept a PS supplied to them directly (or for Cambridge there is a part on the SAQ just for this) or they will be able to reassure you that they understand that they're unique and therefore wont penalise you for applying with a PS focused on a different subject.
