I'm applying to an MSc by research at Oxford. We are asked to list 3 potential supervisors. While there are 3 supervisors in the department that I am interested in working with, one of these research groups is definitely more appealing to me than the others . Let's say that I make informal contact with all 3 supervisors before applying and they all say they would be willing to supervise me.
If I were admitted, would I simply be assigned to one of them, or would I be able to express my preference before beginning? Or should I explicitly state my preference in my statement of purpose?

First you should make contact. Even if all three agree to supervise I'd still list all three and only put in preference if asked. Two reasons for this:
One, you may not get on with the supervisor or like the project once you get there and you don't want to alienate the other two.
Two, the one you want to work with may not have funding for you or a project for you or time for you or some such when you get there so again you don't want to alienate the other two.
