Each course selected through UCAS will only be seen by the relevant university. If you select 5 different universities, say 3 for nursing and 2 for midwifery, then each will only know that you have applied to their one course (until you have acceped/declined offers). On the other hand, if you apply for both nursing and midwifery at the same university, they will be able to see that you have applied for both these courses.

Also, your personal statement ought to be tailored to the course content that you will be studying, to demonstrate your interest in the particular subject. This will be very difficult if you are applying to two different degrees.

Unless there are courses available for general nursing with midwifery specialisms, you would be best to wait to apply until you are sure which degree you want to study.

You can but to be honest it would be an incredibly bad idea to do so, you need to show full commitment in your personal statement to one of them otherwise you could end up getting rejected for not seeming committed enough.
