So basically this individual is a person of interest. We were talking and at the end of my message I wish her a safe journey and to enjoy her time on her holiday. No thank you, no nothing.....for 2 days. Does anyone else think this is rude or am I just being sensitively?

Maybe she found it a bit too.. much? A 'have a good time' may have been better.

In normal speaking conversations yes. However in messaging no. She read and likely didn't see much point just saying anything back.

Nah people do this all the time, they dont reply because they dont feel the necessity in responding, it's really common dont worry, she wasn't deliberately trying to be rude to you

she probably thinks it was just like something to end the chat of like 'bye'
