I'm 21, I have GCSES, but will probably have to resit a couple as IGCSES, and am doing/going to be doing next year as well my ALEVELS as an independent student - do I stand a chance at getting accepted on a medicine course? Say I got five As at GCSE and AAAA at A2?

Why not look into the access for medicine course instead?
If you have the grades from your A levels/access course, work experience, life experience from being older etc etc then you will be fine!
But there are many more variables than just grades. but you need those as a minimum entry into medicine
