Broadly speaking, you can use a z-test if you are dealing with a quantity that has a normal (or approximately normal) distribution with known standard deviation; you can use a t-test if you are dealing with a quantity that has a normal (or approximately normal) distribution with an unknown standard deviation.

Do you have anything more specific in mind?

I'm looking at a table that shows me the sales of t-shirts at the beginning and end of the year for 15 different stores, but what you told me is good, thank you!
