I am currently choosing the a-levels i want to do in college. I want to become an optician and so far i have chosen:
    Chemistry
    Biology
    and Economics
Do you think Economics is a good option. I would do Maths but i feel as if i would find that too difficult.

According to the Prospects website, your choices at A Level should include two science subjects (which you've already decided on, so yay). This means that you can basically do what you want for the other one/two. If you feel like maths would be too hard, don't do it. You already have two difficult subjects with the science ones, so why not take something you enjoy? If you like the sound of Economics, go for it :3
