    I'd say:

    1) Potions
    2) Defence Against the Dark Arts
    3) Transfiguration

But my friend reckons that herbology is the hardest. Idk, thoughts? Pretty sure if you're not focusing on one of those, you should just drop out lol

Honestly, History at A-Level. The amount of content to learn is astonishing and on top of that you need contemporary interpretations and interpretations of different historians, so there is a hell of a lot of quotes to learn as well.

DADA is like studying Law at A-level. The course is a waste of time, but the jobs damn hard.

Divination, because you can't really do anything other than guess and hope you're right.

Transfiguration is the hardest and (according to Mrs Longbottom) Charms is the easiest.

Further Maths and the creative subjects (art and harder essay based subjects) are the hardest for people who aren't naturally good at them. Everything else can be learned by anyone

Personally, I think numerology is pretty hard, however much more enjoyable than divination.
I don't see why everyone finds potions hard.

Really?! There's one gut in my school who got full marks on his History AS exam.

Nah Numerology is easy if you are a halfway logical person. Like Ancient Runes - good, logical subject, but doesn't require truly special skills. Transfiguration is the toughest. I guess the theory in Potions can be hard, but I agree the practical work below OWL is just a pisstake really.
