If I went to jujitsu just once a week could I become good at it after years? Or do you need to be going 2-3 times a week to really be able to fight/defend yourself?

I'm only 5ft and tiny so would like to learn a martial art/self defence but I'm so busy throughout the week with studying, work and other sports

It depends. You will certainly get better over time, and will get better much faster if that one time is a 3 hour session than if it is a 1 hour session. The truth is that you are unlikely to get good enough at any martial art to be able to fight, or even routinely defend yourself but every little will help. In a few years you could reasonably get to blue belt level BJJ which would give you an advantage over many other women.
