Margarines are mixtures of fatty acids/oils with long hydrocarbon chains terminating with a carboxylic acid group or ester.

In margarines (or any long chain hydrocarbon) the m.p. is lowered by having more double bonds in the long hydrocarbon chain. This introduces 'kinks' in the chain preventing them from aligning efficiently and hence lowering the Van der Waals attractions and with it, the m.p.
