I am in my 2nd year of uni and am looking to quit in the next week or so (whenever I'm able to meet my personal tutor) as I'm not enjoying my course. But if i can see if i can do another course at the same uni in September from the beginning would student finance still be able to fund me for the 3 years that my course length is?

No, you would have to fund the first year yourself, including paying your own tuition fees. Your full SF entitlement would kick in for your second and third years.
