It's the last day before Lent, 40 days of fasting in the run-up to Easter Sunday. So traditionally it's a day of feasting. I'm not sure how pancakes came into the mix though.
It's so you have the opportunity to use up your "luxury items", milk, suger .etc. before Lent when you're supposed to give them up (if you're Christian).
