i am finding it hard to find anyone who is counted as 'professional' but isn't a family member. I know a few people such as my uni tutor but she hasn't known me for more than 2 years. The only people i have come up with is the pastor at my local church, though he doesn't really know me since i haven't been to church for ages, and some of my teachers from sixth form.
I am in my 2nd year at uni now so i don't know if asking for a countersignature from one of my ex teachers would be okay, not sure if too much time has gone by. ex-teachers are my best bet, I got on well with them all and some had known me for 5 years or more. my sixth form tutor would have seen me basically ever day for around 2 years.
however, it also says that they have to know you at a personal level not a professional one- and in that case i'm not sure that a countersignature from a teacher would be acceptable

I would imagine it depends how well your teachers know you. There's no harm in contacting them and seeing what they say?
