My parents don't want me to study medicine as a result of my mental health. They are saying it is a bad decision because of the stress involved. What should I do in this situation? I know in my heart I want to be a doctor... should I just forget this and choose something else to do?

This is just like choosing a subject you like and one that you're good at.

Make sure you know you can cope with the stress, and you want to be a doctor so the only thing holding you back is the mental stress but i guess that's up to you.

If are successful in getting an offer you will need to pass a medical check as part of the conditions, so it could be worth speaking to potential universities first to see if they envisaged any problems.
