This week i need to finalise my higher choices, I want to do international relations at uni and maths isn't asked for however i'm told that you need a maths higher for many jobs,is this true? Also I'm expected a B/C at Nat 5 and don't know if the course will be too hard for me

The jump from Nat. 5 to Higher is huge. People who get an A at Int 2, which is harder than Nat. 5, can struggle with Higher. You should always take the subjects in which you feel you are going to perform the best & secure the highest grades. If you don't need Maths, then I would avoid it.

However, if you subsequently change your mind about the course you want to do at uni, be aware that you might be potentially closing a door by not taking maths.

Unless you want to do a uni course and job in something like engineering or medicine, there is absolutely no need to take higher maths. In fact, you would be far better to do a higher in which you could get a better result.

I am not aware of any jobs that require higher maths - or, in fact, any highers at all. Jobs that need that level of knowledge will more than likely ask for a degree in a relevant subject.

No, the vast majority of university courses do not ask for higher maths. As long as you have any required degree for the job, they won't be interested in whether or not you have higher maths.
