This is important because, say, you walk into the Arctic, your external environment will place a huge stress on your body, as your internal body temperature will also decrease. Without homeostasis, enzymes will cease to function and physiological processes will also begin to cease.
Hence homeostasis is significant in that it allows our body to maintain this constant internal environment that is needed for cells to function efficiently.

Homeostasis keeps four things stable: blood sugar level, water level, ion level, temperature. If any of these are too high/low it would have harmful effects.
