There are also mixed practices that will treat all or just some species. For example on practice near me treats Smallies, equine and exotics. These tend to be the larger practices with 10+ vets
In addition there are also the veterinary hospitals with the specialists, who have done extra years of training (usually an internship, 1y, followed by a residency, 3y, I think) and extra exams to get specialist qualifications in areas like neurology, oncology, dermatology, imaging, orthopaedics, cardiology, soft tissue surgery, etc.
Vets can also work in the Army, Royal Army Veterinary Corps as veterinary officers, which I believe is a mix of clinical and non-clinical work but I don't know much about this.
There are also vets working in government agencies, research, teaching/lecturing and doing things not vet-y at all. You can do pretty much anything, I know a recent graduate who is now an accountant. Its is a very well respected degree outside the vet world so most areas would be open to you after graduation.
Just thought I would also mention, if you post this in the vet forum you may get more answers:
If you have other questions feel free to ask, but I'm only a third year vet student so I may not know the answer
