    Yep you've got to assume the data is approximately normal when running a t test and should state this assumption - or do a test of the normality of the data.

    whether you'll be able to do matched or unmatched tests depends on what type of experiment you're doing. there are online statistic test choosers to help you decide what's appropriate.
