The client is the person paying for the work, and the contractor is the person building it. Basically.

I understand the roles if both the client and contractor but in regards to finishing my course and applying for jobs... What would be the difference working for the contractors site to the clients side? (Management)

It depends on what client / contractor etc and type of contract. Generally the contractor will be looking to cut costs (therefore compromise design) and the client will be looking to keep standards high (if they have an interest in design). Some may just be looking to save money as well. In my experience contractors care much less for design and just want to get it built as easily and cheaply as possible
