For my controlled assessment writing I've got an A* in both, and my teacher who is a harsh marked said that the examiners are likely to drop it, because they're quite harsh markers.
For my speaking I've got two As but overall I really want an A*, so if I got A*s in the exam would I be able to get an A* overall? The controlled assessment altogether is worth 60% and the exam is worth 40%.

Yep! Even if your writing got moved down to an A, it would still be possible to get the A* overall, as long as you got around 59/60 UMS in both listening and reading (which is the highest UMS you can get on one of those papers). I don't know exactly what you'd need to get the A* overall because I don't know your exact marks, but it's definitely possible

Yeah, I think it's possible because, in all of my assessments ( 2speaking 2 writing) I got A*s at 86UMS each and I'm pretty sure my teacher said I can still come out with an A if I get B's in my exams.
