Basically I have been using facebook for about a year but not very much and don't really understand that much about how people use it. I've just been sent a friend request by someone on the same course as me (at university), but otherwise I don't know or recognise her. Is this kind of thing normal???(previously I've friended people I know personally though guess it would explain how some people have 1000+ friends..

Yeah it's normal People will just add you if they've seen you around or you have a few mutual friends. Ofcourse it's upto you to accept or decline, incase you want your fb a little more personal
